Oka is my sister’s horse; this superb Auxois witch bravely, quietly, works the soils of my best plots. This cuvée is a tribute to hard work, a meaningful values for us growers. The estate technical team manage the harvest. The other operation belongs to the farmer partners. Green harvest, hand de-leafing. Since 2013 the farming is done respecting the prescriptions for organic farming.The aging is made in French oak barrels for 14 to 18 mouths. The wine is racked with air once during the aging. We use only use barrels for this wine. We bottle the wine with out finning filtration, and following the moon calendar.
