Description
Philippe Pacalet is a vigneron of the young generation in Burgundy. He was formerly estate manager at the Domaine Prieuré Roch (until 1999), he now rents a collection of vineyard plots in the Beaune area and expertly vinifies his natural wines in 3 differents chais a few kilometers from each other. His wines are now widely appreciated, in France and abroad .
This is also restrained though the nose of earth, game, forest floor, wet stone and violet aromas is a bit more forthcoming. There is more volume and muscle to the medium weight plus flavors that exude plenty of minerality onto the sleek, focused and wonderfully persistent finale. This is presently very firm and while not aggressively austere there is enough austerity present to confirm that this will not be an especially good candidate for early consumption. Recommended provided that once again you have the patience to wait.
