As early as the end of the 16th century, the Szépsy family is active in winemaking in the Hungarian sweet wine region, Tokaj. Even during the communist rule, István Szépsy senior succeeds in cultivating a small vineyard independently and to save it from the grasp of the party officials until into the 1970’s. After the death of his father, the current business owner, István junior plants four hectares of his own vines in 1975, the yield of which he has to deliver to the state combine, however. When the political system changes in 1990 in Hungary Szépsy is prepared to produce and market wines under his own name.

Initially the state test committee for Tokaj wines does not think that Szépsy’s wines are typical enough. Szépsy criticizes the aging process which is usual in Tokaj and which gives the sweet wines a trace of oxidation. Instead, Szépsy vinificates towards freshness and cleanliness: to do this he leaves the mashed raisins to ferment with the wine from normal ripe grapes right from the start – unlike in the traditional recipe, where the mashed raisins are added to the already fermented wine. However, Szépsy prevails with his modern, international Tokaj style – particularly in exports. The publicity shy winemaker, who is well-known for getting up at four o’clock in the morning to be in the vineyard as early as possible, produces noble-sweet Aszú-wines as well as a dry white wine from the top vineyard Szent Tamás.
