A Barossa native, Tom studied agriculture before moving to Italy and spending 6 years working for Sean O’Callaghan at Riecine in Chianti Classico. In 2007 he returned to Australia and introduced the Barossa Valley to biodynamic, low intervention, natural winemaking - total anathema at that time. Tom farms his own iron-rich land biodyamically in the cool microclimate of Seppeltsfield, as well as buying fruit from other local organic growers when he deems it good enough.

The best fruit from every year goes to this wine from this unique, elevated section of the vineyard. Fermented for eight weeks in wood, then left in barrel for a year, then in bottle for a year before release. A ‘traditional’ take on Barossa shiraz.
