Benoit Marguet is one of the leaders of the organic revolution in Champagne, and all of his estate vineyards are in conversion to biodynamic farming. He has returned to plowing the vineyards with a horse rather than with a tractor, as the horse hooves aerate the soil while a tractor compacts the soil. In the cellar, he is returning to wood as a fermentation vessel rather than stainless.

From organically farmed vines (which are undergoing conversion to biodynamic farming) and aged in oak until the bottling in July 2011, Marguet's 2010 Ambonnay Grand Cru blends 58% Pinot Noir with 42% Chardonnay and spent more than five years sur lattes. The wine offers a clear, fresh, deep and spicy scented bouquet with a lovely bright and fruity nose. On the palate, this is a full-bodied, fresh, mouth-filling, creamy-textured and almost juicy cuvée with a very good structure, stimulating vitality and just a touch of oaky flavors. It has very good length and some iodine flavors. This bottle was disgorged in October 2016. Tasted August 2018. Wine Advocate 92
